Chilli Chocolate Brownies

  • 200g butter melted
  • 4 large eggs
  • 2 cups sugar
  • 2 tsp vanilla essence
  • ⅔ cup high quality unsweetened cocoa
  • 1 cup plain flour
  • 1½ tsp cinnamon
  • 2 flat tsp cayenne pepper
  • ¼ tsp salt
  • ½ tsp baking powder
  1. Preheat the oven to 170C or 350F degrees.
  2. Line a 23cm x 33cm or 9" x 13" baking dish with parchment paper, leaving an overhang on two sides.
  3. Press the paper into the corners of the pan and lightly grease the paper with butter.
  4. Melt the butter gently and allow to cool slightly
  5. Add sugar, eggs and vanilla to saucepan and stir with a wooden spoon to combine
  6. Add cocoa, flour, cinnamon, chillil powder, salt and baking powder
  7. Mix until smooth
  8. Spread batter into prepared pan and bake until a toothpick comes out fudgy from the middle of the tin
  9. This will take around 25 minutes depending on your oven
  10. Cool the pan on a rack then use the parchment paper to lift out the brownies before slicing
