Zucchini Pudding

Depending on the sweetness of the zucchini, you may need to add another tablespoon of sugar. Check the sweetness level before adding the cornflour paste.
  • 1 cup water
  • 3 medium zucchinis, peeled and cubed
  • 2 cups milk, half or full fat
  • ½ cup sugar
  • 2.5 Tbsp cornflour
  1. Place the cubes of zucchini in a small pot with the cup of water.
  2. Bring to boil, then simmer till the zucchini are soft.
  3. Drain zucchini and reserve some of the liquid.
  4. Put the zucchini in a pan and blend using a hand blender
  5. Add the milk and sugar and blend again so that it is very smooth.
  6. Put the pan on a medium heat and stir, on and off. for 5 minutes
  7. At this point, take a small taste test and adjust if more sugar is needed
  8. Mix the cornflour with ¼ cup of the reserved cool zucchini liquid
  9. Stir into the simmering pot
  10. Keep stirring for 4 minutes until it has thickened and has cooked.
  11. If necessary, use the blender to make sure it is really smooth
  12. Spoon out the Zucchini Pudding into 4 or 5 small bowls
  13. Chill in the fridge for min 2 hours
  14. Dress with walnuts or other nuts if desired
