Yufka Dough

My neighbour told me this trusted recipe but I cannot own up to trying to make it myself. I am not very adept at rolling out pastry at any time and I am quite sure I wouldn’t find this easy but perhaps one day I will not be able to get to a Yufkaci and will have to make my own

Ingredients
  • 6 cups flour
  • 1 tsp salt
  • Tepid water
Instructions
  1. Mix the salt into the flour and slowly add water until the dough has the consistency of your soft ear lobe.
  2. This is a very common expression but also taken seriously to guide the cook how the dough should feel once it is ready.
  3. Let this dough rest 15 minutes
  4. Divide it into 12 balls which will make 12 sheets of yufka
